[Cooking Mama Recipe: Shahi Paneer]

Ingredients:

  • 400g paneer (cottage cheese)
  • 2 large onions
  • 2 tablespoons of oil
  • 3 cloves
  • 4-5 black peppercorns
  • 1-inch stick of cinnamon
  • 2 green chillies, slit
  • 1 teaspoon of ginger paste
  • ¼ cup of tomato puree
  • 1 teaspoon of garlic paste
  • ¼ cup of cashew nut paste
  • ½ cup of yogurt
  • ½ cup of cream
  • Salt
  • 1 pinch of saffron (kesar)
  • ½ teaspoon of mixed spices (garam masala)
  • ¼ teaspoon of green cardamom powder

Recipe:

  1. Cut the Paneer into half-inch wide and one-inch long pieces.
  2. Boil the Onions in quarter cup of water. Drain and allow to cool, grind to a fine paste.
  3. Heat the Oil in a deep pan. Add Cloves, Peppercorn, and Cinnamon. Sauté till fragrant.
  4. Add Green Chilies, Tomato Puree and Boiled Onion Paste. Sauté for 3-4 minutes on low heat so it doesn’t get coloured.
  5. Add Ginger and Garlic Paste and continue to sauté for half a minute.
  6. Add Cashew Nut Paste. Sauté for another two minutes.
  7. Add Yogurt and sauté till the water from the yogurt gets absorbed.
  8. Stir in Cream, Saffron, and Garam Masala powder, along with Salt to taste.
  9. Add the Paneer and stir gently to mix. Sprinkle with Cardamom Powder.
  10. Serve hot with Paranthas (Indian bread) or any other bread/rice! Done!

材料:

  • 400克印度芝士Paneer(用茅屋芝士亦可)
  • 兩個大洋蔥
  • 兩湯匙油
  • 三根丁香
  • 四至五黑胡椒子
  • 一吋厚的肉桂
  • 兩條開邊的青辣椒
  • 一茶匙薑蓉
  • 1/4杯番茄醬
  • 一茶匙蒜蓉
  • 1/4杯腰果蓉
  • 半杯乳酪
  • 半杯忌廉
  • 鹽(適量)
  • 番紅花(少量)
  • 半茶匙瑪撒拉綜合香料garam masala
  • 1/4茶匙青豆蔻粉

做法:

  1. 將印度芝士切成半吋寬、一吋長的形狀。
  2. 將洋蔥放入1/4杯熱水裡煮。煮熟後瀝乾待涼,切磨成洋蔥蓉。
  3. 熱鍋下油,放入丁香、胡椒子、肉桂等,爆香。
  4. 加入青辣椒、番茄醬及洋蔥蓉,用慢火烹調三至四分鐘。
  5. 加入薑蓉和蒜蓉,繼續以慢火烹調半分鐘。
  6. 加入腰果蓉,以慢火繼續烹調兩分鐘。
  7. 加入乳酪,一直烹調至所有從乳酪滲透出來的水都被醬汁吸收。
  8. 加入忌廉、番紅花及綜合香料Garam Masala粉,下適量的鹽,攪拌。
  9. 加入印度芝士,慢慢攪拌。最後灑上青豆蔻粉於表面。
  10. 完成!此咖喱與印度抓餅特別相配(也可配飯或普通麵包),熱辣辣上菜尤其好吃。
